Sweet and Salty Peanut Butter Cookies
Ingredients
- 1/2 cup crunchy peanut butter
- 1/2 cup coconut sugar
- 1 tsp vanilla
- 1/2 cup oat flour (more if you prefer a chewier cookie)
- 1/2 tsp bicarbonate of soda
- 30 ml (2 tbsp) water or almond milk
- Good pinch of sea salt
Preparation
Heat your oven to 180 fan.
Beat together the peanut butter and sugar for 1 minute and mix in the vanilla.
In a separate bowl, whisk the oat flour, bicarbonate of soda, and salt and add chopped peanuts if the peanut butter isn’t crunchy.
Add the dry ingredients to the wet ingredients.
Add water and mix to form a dough.
Roll into golf-ball shaped balls and press down onto a lined baking tray with the back of a fork and add a good pinch of sea salt on top.
Bake for about 12 minutes until golden and leave to cool on the tray.
