Homemade Pretzel Buns with Crispy Crust

Ingredients

  • 450g flour
  • 15g fresh yeast
  • 200ml water
  • 1ts salt
  • 1 pinch sugar
  • 3tb baking soda
  • Rough salt or sesame seeds

Preparation

  1. mix yeast with water

  2. Add salt, sugar and flour and mix well (you might need a bit more water depending on flour)

  3. Let it rise for about 30 minutes with a kitchen towel on top

  4. Now kneed the dough again

  5. Let it rise for another 30 minutes

  6. Form the buns

  7. Let them rise another 30 minutes

  8. Place baking paper on baking tray

  9. preheat the oven on 200 degrees circulating air

  10. Place the baking soda in 1 liter of water and get to boil

  11. Now cook each bun for about one minute turning it in between

  12. Then add to the baking tray

  13. Cut a cross in the middle of the bun

  14. Sprinkle salt or sesame seeds on top

  15. Bake for 15-25 minutes
