Vegan Frozen Cheesecake Bites

Ingredients

  • - 1/2 cup dairy-free ricotta (or regular ricotta drained of all moisture) (120 g) I used kitehillfoods not sponsored
  • - 1/4 cup almond flour (28 g)
  • - 2 tbsp maple syrup (42 g)
  • - 1 tbsp coconut oil melted (15 g)
  • - 1 tbsp juice of lemon
  • - 1 tsp vanilla
  • - 2 tbsp any jam (30 g)

Preparation

  1. Makes 16 bites.1. Mix all these things except jam, stir until well blended

  2. Add jam (i used cooked berries) and fold a couple of times to create a swirl

  3. Scoop on parchment, freeze until solid

  4. Keep bites frozen
