15-Minute Miso-Glazed Mushrooms

Ingredients

  • 14 oz button mushrooms
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 1/3 cup tamari
  • 2 tsp miso paste
  • 2 tbsp apple cider vinegar
  • 2 tbsp maple syrup
  • 2 tbsp water
  • 1 tsp cornstarch

Preparation

  1. Cook the mushrooms for 10 minutes, and drain and rinse when done.

  2. Heat the olive oil in a frying pan and cook the onion for 5 minutes.

  3. Make the glaze by stirring together the tamari, miso paste, apple cider vinegar, maple syrup and water.

  4. Add the mushrooms to the pan together with the glaze and cornstarch.

  5. Stir until the sauce thickens.
