Arabic Spiced Meat and Vegetable Stew

Ingredients

  • 1 kg meat
  • 2 tablespoons ghee
  • 2 onions
  • 4 cloves garlic
  • 1 tablespoon ginger
  • 3 tomatoes
  • 2 green bell peppers
  • 1/2 cup tamarind
  • 3 tablespoons tomato paste
  • 1 tablespoon salt
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon cardamom
  • 1 teaspoon cinnamon
  • 2 bay leaves
  • 1 carrot
  • 2 potatoes
  • 2 zucchinis
  • Black pepper

Preparation

  1. Wash the meat thoroughly and place it in a strainer to drain.

  2. Sprinkle a little black pepper over the meat.

  3. In a pot, heat the ghee and brown the meat on all sides. Remove it from the pot.

  4. In the same pot, add the onion and stir until it wilts.

  5. Add the garlic and ginger, and stir until they darken in color.

  6. Add the tomatoes and stir to absorb the flavors, then add the green bell pepper.

  7. Add the tamarind, tomato paste, salt, pepper, cumin, coriander, cardamom, cinnamon, and bay leaves.

  8. Return the meat to the pot, stir well to combine, and add a little water to cover the meat.

  9. Cover the pot and cook on medium heat until the meat is almost done.

  10. Add the carrot, potatoes, and zucchini, and add more water if necessary. Cover and cook until the vegetables are tender. Serve with rice or flatbread.
