Meat and Freekeh Tajine

Ingredients

  • 1 boiled and cut thigh piece
  • 3 cups broth from boiling the thigh
  • 2 cups freekeh
  • 3 tablespoons olive oil
  • 2 large chopped onions
  • 3 crushed garlic cloves
  • 2 chopped green bell peppers
  • 1 teaspoon ground cardamom
  • 1 tablespoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon cinnamon
  • 2 tablespoons tomato paste
  • 2 cups tomato juice

Preparation

  1. Wash the freekeh well and soak it in water for 30 minutes.

  2. In a small bowl, put the cardamom, salt, black pepper, cumin, coriander, and cinnamon, and mix the spices to combine.

  3. In a suitable oven pot, heat the oil, add the onion, stir until wilted, add the garlic and green pepper, and stir until the garlic aroma appears.

  4. Add the boiled meat pieces and stir to brown with the mixture, then add the spice mixture and brown a little.

  5. Add the freekeh and brown also with the meat, then add the tomato paste, tomato juice, and broth, let it boil strongly, cover the pot, and place in the oven at 180°C for an hour until the freekeh is cooked.

  6. Pour the freekeh into a serving dish and garnish with nuts.

Notes

  1. Garnish with nuts, which may be optional or added based on preference.
