Spiced Lamb and Tomato Stew
Ingredients
- 1 kg lamb cut into small cubes
- 3 tablespoons flour
- 2 tablespoons ghee
- 3 large onions coarsely chopped
- 6 cloves garlic sliced
- 2 green bell peppers halved
- 1 teaspoon mixed spices
- 1 teaspoon salt
- 1 teaspoon cumin
- 1 teaspoon crushed hot pepper
- 1 teaspoon ground coriander
- 1/2 teaspoon black pepper
- 3-4 large tomatoes peeled and chopped
- 2 tablespoons tomato paste
- 1-2 cups water
For serving
- Chopped fresh coriander
Preparation
On high heat, place the special pan for cooking mqlql and let it heat completely. Add the ghee and let it melt. You can use a thick-based pan if you do not have the special one.
Sprinkle the flour on the meat pieces. Place the meat pieces in the hot pan. Using a wide metal spoon, stir the meat until its water evaporates, color turns golden, and it browns.
Add the onion, garlic, pepper, spices, salt, cumin, hot pepper, coriander, and black pepper. Stir the meat with onion and garlic until the aroma of garlic and spices rises.
Add the tomatoes, tomato paste, and water. Stir the meat until the sauce forms and starts boiling. Let the mqlql cook on fire for 20 to 30 minutes until the meat is fully cooked.
Serve the mqlql hot with white rice or Iranian bread.
