Fried Eggplant with Meat

Ingredients

  • 2 medium eggplants
  • 200 grams ground meat
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon mixed spices
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon cumin
  • 1 large onion, julienned
  • 4 cloves garlic, crushed
  • 1 large sweet green pepper, cut into thin strips
  • 1/4 cup tomato paste
  • 3 large tomatoes, peeled, seeded, and diced
  • 1 teaspoon chopped chili pepper
  • 2 tablespoons fried pine nuts
  • 2 tablespoons chopped parsley
  • 2 chili peppers
  • Corn oil, for frying

Preparation

  1. Peel the eggplant and cut it into thick fingers, then set aside.

  2. In a small bowl, put the pepper, salt, spices, paprika, coriander, and cumin, and mix to combine the spices.

  3. In a dish, put the meat and half the amount of spices, mix well, then shape into small fingers.

  4. In a skillet, heat 2 tablespoons of oil, add the kefta fingers, stir until browned and cooked, then remove from the skillet and set aside.

  5. In the same skillet, add the onion and garlic and stir until golden.

  6. Add the pepper and stir with the onion.

  7. Add the tomato paste and stir well, then add a quarter cup of water and leave the sauce to simmer for a few minutes.

  8. Add the eggplant, kefta fingers, tomatoes, chili, and the remaining spices, cover the skillet, and leave on low heat for a few minutes to simmer. Serve in the skillet or as desired.
