Bulgur Pilaf with Meat and Vegetables
Ingredients
- 2 cups coarse bulgur
- 3 tablespoons ghee
- 1 small onion, chopped
- 250 grams coarse ground meat
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon baharat spice blend
- 1 tablespoon tomato paste
- 1 small hot pepper, chopped
- 1 cup chopped tomatoes
- 2 cups sliced cabbage
- 2 cups water or broth

Preparation
Wash the bulgur several times then soak it in water for 30 minutes.
In a medium-sized pot, put the ghee and onion and place the pot on medium heat.
Using a wooden spoon, stir the onion until it softens.
Add the meat, salt, pepper, and baharat spice blend. Stir until the meat browns. Add tomato paste, hot pepper, tomatoes, and cabbage. Stir for 3 to 4 minutes until the cabbage softens.
Drain the bulgur and add it to the meat and vegetables. Add the broth or water. Wait until the bulgur absorbs most of the water, then cover the pot and reduce the heat. Let the bulgur cook for 20 minutes until fully cooked.
Pour into a wide serving dish.
Distribute the nuts over the bulgur and serve.
