Chickpeas and Zucchini Stew with Spiced Tomato Sauce

Ingredients

  • 1/2 chopped onion
  • 1 tsp garlic
  • 2 small diced zucchini
  • 3 cups or cans of chickpeas (rinsed and dried)
  • 1 small jar of tomato sauce
  • 1 tbs tomato paste
  • 1 tsp dry basil
  • salt to taste
  • parsley and red cilantro for garnish

Preparation

  1. In a pan, sauté the onion and garlic.

  2. Add the zucchini and let it cook.

  3. Then add the chickpeas and the rest of the ingredients except the herbs for garnish.

  4. Let it simmer for a few minutes.

  5. You can add a bit of water for more liquid consistency.

  6. Garnish with parsley and red cilantro.
