Classic Hearty Stovetop Chili
Ingredients
- 1 lb ground beef
- 1 medium onion
- 2 bell peppers
- 1 28-oz diced tomato
- 1/2 cup of tomato passata or pasta sauce
- 2 cups broth (beef or chicken)
- 1 can kidney beans
- 1 can corn
- 2 tbsp chili powder
- 1 tbsp cumin
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp cayenne
- 1/2 tsp salt
- 1/2 tsp pepper

Preparation
Dice onion and pepper
Rinse and drain beans and corn
Heat a large pot or Dutch oven over medium heat and add a drizzle of olive oil
Add onion and cook for 5 minutes until translucent
Add ground beef and cook, crumbling, until no longer pink, about 5 minutes
Stir in peppers and all seasonings, and cook for another 2 minutes
Add beans, corn, diced tomato, broth, and passata or tomato sauce
Bring to a boil, then lower heat, cover, and simmer for 25 minutes
Optionally, blend a little using an immersion blender for a smoother consistency
Divide into bowls and top with favorite toppings
