Creamy Coconut Pasta

Ingredients

  • 2 cups pasta of choice
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2/3 cup coconut milk
  • 2 tbsp gluten-free flour or cornstarch
  • 2 tbsp nutritional yeast
  • 1 can chickpeas, drained and rinsed
  • 3/4 cup green peas

Preparation

  1. Cook the pasta according to packaging instructions. Meanwhile, sauté the onion and the garlic in either olive oil or veggie broth for 3-4 minuted, until softened

  2. Add the coconut milk, gluten-free flour/cornstarch and nutritional yeast and stir for a couple of minutes to allow the sauce to thicken slightly

  3. Drain the pasta and transfer to the frying pan together with the chickpeas and green peas. Season to taste with salt and cook until all the pasta is evenly coated. •
