Creamy Vegan One-Pot Pasta

Ingredients

  • 300 grams wholemeal penne pasta
  • 1 tbsp vegetable bouillon powder / cube
  • a handful sun-dried tomatoes
  • 1/2 can coconut milk
  • 1 cup boiling water
  • 1/2 box of corn
  • 1/2 red onion
  • 2 garlic cloves
  • 2 mushrooms
  • 1/2 tsp chili powder
  • 1 tsp paprika powder
  • 1 tsp provence spices
  • 2 tbsp nutritional yeast
  • 1 tbsp soy sauce
  • salt + pepper
  • optional:
  • handful of kale or spinach
  • fresh basil

Preparation

  1. Chop onion + garlic and fry in pan with some oil until browned, add a splash of water to deglaze the pan

  2. Add all other ingredients, stir, bring to a boil and leave to cook on low/medium heat until the pasta is done (15-20 minutes)

  3. Then add greens as wanted and give it a stir while cooking for 1-2 minutes, ready to serve
