Creamy Vegan One-Pot Pasta
Ingredients
- 300 grams wholemeal penne pasta
- 1 tbsp vegetable bouillon powder / cube
- a handful sun-dried tomatoes
- 1/2 can coconut milk
- 1 cup boiling water
- 1/2 box of corn
- 1/2 red onion
- 2 garlic cloves
- 2 mushrooms
- 1/2 tsp chili powder
- 1 tsp paprika powder
- 1 tsp provence spices
- 2 tbsp nutritional yeast
- 1 tbsp soy sauce
- salt + pepper
- optional:
- handful of kale or spinach
- fresh basil
Preparation
Chop onion + garlic and fry in pan with some oil until browned, add a splash of water to deglaze the pan
Add all other ingredients, stir, bring to a boil and leave to cook on low/medium heat until the pasta is done (15-20 minutes)
Then add greens as wanted and give it a stir while cooking for 1-2 minutes, ready to serve
