Gluten-Free Low Carb Lettuce Wrap

Ingredients

  • 1/2 block firm tofu
  • 3/4 cup jicama
  • 1/2 cup cashew
  • 1/2 cup mixed vegetables (peas, carrots, corn)
  • 1/4 cup mushrooms
  • 2 tbsp stir fry sauce
  • 1 tbsp soy sauce or tamari
  • salt to taste
  • sesame oil
  • hoisin sauce for serving
  • butter lettuce

Preparation

  1. In a heated pan with 1 tbsp sesame oil, pan-fry tofu until golden brown.

  2. Add mushrooms, mixed vegetables, jicama, and all sauces, coat well.

  3. Turn off heat and stir in cashew.

  4. Serve with butter lettuce, sesame seeds, and a little hoisin sauce.
