Gluten-Free Low Carb Lettuce Wrap
Ingredients
- 1/2 block firm tofu
- 3/4 cup jicama
- 1/2 cup cashew
- 1/2 cup mixed vegetables (peas, carrots, corn)
- 1/4 cup mushrooms
- 2 tbsp stir fry sauce
- 1 tbsp soy sauce or tamari
- salt to taste
- sesame oil
- hoisin sauce for serving
- butter lettuce
Preparation
In a heated pan with 1 tbsp sesame oil, pan-fry tofu until golden brown.
Add mushrooms, mixed vegetables, jicama, and all sauces, coat well.
Turn off heat and stir in cashew.
Serve with butter lettuce, sesame seeds, and a little hoisin sauce.
