Healthy Chicken Noodle Soup

Ingredients

  • - 3 cups chicken bone broth (I used one bag of @bonafideprovisions )
  • - 4 cups low sodium chicken broth - 2 tsp olive oil - 2 large carrots chopped - 2 stalks of celery thinly chopped and diced - 1 large leek chopped
  • - 1 yellow onion diced - 1 tbsp minced garlic - 1 tsp ginger minced - Salt and pepper to taste - 2 bay leaves - 4 sprigs of fresh thyme (take the leaves off the stalks)
  • - 1.5lb chicken breast - 6-8oz of whole wheat egg noodles - Fresh parsley for topping

Preparation

  1. Heat the oil in a dutch oven or large pot on medium heat

  2. Add in the carrots, celery, onion, and leek and cook (stirring) until starting to soften (about 5ish minutes)

  3. Stir in the minced garlic and ginger for about 30 seconds or until fragrant

  4. Add both broths, the thyme, bay leaves, and salt & pepper

  5. Bring to a boil and then reduce heat so it’s a low simmer

  6. Fully submerge the chicken so it’s completely covered by the broth

  7. Let simmer for about 20 minutes or until the chicken is fully cooked

  8. Remove the chicken and add in the noodles to cook for about 7 minutes

  9. While the noodles are cooking, shred the chicken

  10. Stir the chicken back in and then it’s ready to serve! Top with chopped parsley and enjoy
