Indian Potato and Cauliflower Curry
Ingredients
- 1 medium cauliflower cut into florets
- 7-8 baby potatoes cut in half or in threes
- 1 onion
- 2 tomatoes
- 1/2 tsp cumin seeds
- 1 tsp minced ginger
- 1/2 tsp minced garlic
- 1/2 tsp turmeric
- 1 tsp ground coriander
- 1/2 red chili
- Salt and pepper
- 2 tbsp oil
Preparation
In a pan, heat oil and fry potatoes until softened, then add cauliflower and fry for about 8 minutes in total. Remove and set aside.
Add more oil to the pan and fry cumin seeds until they crackle, then add onions and sauté until browning. Add the rest of the spices, ginger, and garlic.
Add tomatoes and cook until they turn into a paste, about 5 minutes.
Add potato and cauliflower back in with about 200ml water. Bring to a boil, reduce heat, and simmer for 10 minutes, stirring occasionally.
Serve with rice and chapati.
