Instant Pot BBQ Chicken Stuffed Sweet Potatoes

Ingredients

  • 4 sweet potatoes
  • 2 chicken breasts
  • 1 cup BBQ sauce

Toppings

  • pickled jalapeños
  • cilantro
  • optional cheese

Preparation

  1. Scrub and wash 4 sweet potatoes, pierce with a fork, and place in Instant Pot on trivet or steam basket with 1 cup water. Pressure cook for 16 minutes and naturally release for 10 minutes.

  2. Remove sweet potatoes and let cool.

  3. Place 2 chicken breasts and 1 cup BBQ sauce in Instant Pot and pressure cook for 10 minutes with natural release for 10 minutes.

  4. Shred chicken and toss with juices.

  5. Cut potatoes lengthwise, mash sides with a fork, stuff with chicken, and top with pickled jalapeños, cilantro, and optional cheese.

  6. This dish is great for meal prep.

Oven alternative

  1. For chicken, bake in oven with 1/2 cup BBQ sauce at 375°F for 25 minutes, then shred and add remaining 1/2 cup sauce.
