Instant Pot BBQ Chicken Stuffed Sweet Potatoes
Ingredients
- 4 sweet potatoes
- 2 chicken breasts
- 1 cup BBQ sauce
Toppings
- pickled jalapeños
- cilantro
- optional cheese
Preparation
Scrub and wash 4 sweet potatoes, pierce with a fork, and place in Instant Pot on trivet or steam basket with 1 cup water. Pressure cook for 16 minutes and naturally release for 10 minutes.
Remove sweet potatoes and let cool.
Place 2 chicken breasts and 1 cup BBQ sauce in Instant Pot and pressure cook for 10 minutes with natural release for 10 minutes.
Shred chicken and toss with juices.
Cut potatoes lengthwise, mash sides with a fork, stuff with chicken, and top with pickled jalapeños, cilantro, and optional cheese.
This dish is great for meal prep.
Oven alternative
For chicken, bake in oven with 1/2 cup BBQ sauce at 375°F for 25 minutes, then shred and add remaining 1/2 cup sauce.
