Baked and Stuffed Sweet Potatoes

Ingredients

  • sweet potatoes
  • quinoa
  • beets
  • sprouts
  • cilantro
  • avocado
  • cilantro tahini dressing

Preparation

  1. Slice each potato vertically and make some horizontal slices, but only halfway to avoid cutting it in half.

  2. Place the potatoes on a baking dish lined with parchment paper, with some water underneath.

  3. Cover them with silicone baking mats and bake for around 50 minutes, then remove the mats and bake for an additional 10 minutes.

  4. Let the potatoes cool down, then carefully open them without splitting in half.

  5. Stuff with desired ingredients.

Tips

  1. Switch to silicone baking mats instead of aluminum foil for healthier and more sustainable choices.
