Jerk Cauliflower with Sweet Potato and Kale

Ingredients

  • 1 head of cauliflower
  • 1 large sweet potato
  • 100g Kale
  • 3 tbsp olive oil
  • 2 tbsp jerk seasoning
  • Salt & pepper

Preparation

  1. Pre heat the oven to 190C.

  2. Scrub the potato clean & cut into chips, drizzle with olive oil, salt & pepper & roast in the oven for 35-40 mins, flipping halfway.

  3. Cut the cauliflower in florets & then drizzle with 1 tbsp olive oil & sprinkle over the jerk & massage it all in. Roast in the oven for 25 mins.

  4. Sort the kale by removing the stalky bits & then massage 1 tbsp olive oil in & salt & pepper to taste. Roast in the last 5 mins until crispyyy.

  5. Serve it all up & enjoy
