Jerk Cauliflower with Sweet Potato and Kale
Ingredients
- 1 head of cauliflower
- 1 large sweet potato
- 100g Kale
- 3 tbsp olive oil
- 2 tbsp jerk seasoning
- Salt & pepper
Preparation
Pre heat the oven to 190C.
Scrub the potato clean & cut into chips, drizzle with olive oil, salt & pepper & roast in the oven for 35-40 mins, flipping halfway.
Cut the cauliflower in florets & then drizzle with 1 tbsp olive oil & sprinkle over the jerk & massage it all in. Roast in the oven for 25 mins.
Sort the kale by removing the stalky bits & then massage 1 tbsp olive oil in & salt & pepper to taste. Roast in the last 5 mins until crispyyy.
