Mediterranean Gluten-Free Vegan Pasta Salad

Ingredients

  • chickpea pasta
  • red pepper
  • yellow pepper
  • red onion
  • Italian parsley
  • cilantro
  • basil
  • cucumber
  • Kalamata olives
  • artichokes
  • cherry tomatoes
  • capers
  • EVOO
  • Za’atar or Greek Seasoning
  • salt and pepper
  • nutritional yeast
  • garlic powder
  • red wine vinegar
  • lemon zest
  • vegan feta

Preparation

  1. Cook pasta according to package.

  2. While pasta is cooking, prep all your veggies and place in a large bowl.

  3. Once pasta is finished cooking, rinse with cool water until pasta is no longer hot. Transfer to bowl with fresh veggies.

  4. Drizzle with EVOO, vinegar, lemon zest, and add seasonings! Toss to combine. Top with vegan feta.

  5. Best if it sits in the fridge for an hour to let flavors combine, but can be eaten right away.
