Quick and Easy Tempeh Stir Fry

Ingredients

  • 4 tablespoons sesame oil
  • 1.5 cups grated tempeh
  • 3 tablespoons liquid aminos
  • 1 tablespoon chili oil
  • 2 tablespoons rice vinegar
  • 1 teaspoon garlic powder
  • 0.25 teaspoon ginger powder
  • 6-7 shiitake mushrooms
  • 7 bok choy
  • 16 ounces udon noodles, cooked

Preparation

  1. Add sesame oil, tempeh, liquid aminos, chili oil, rice vinegar, and garlic and ginger powders to a medium-sized pan on medium-low heat for about 10 minutes. Stir occasionally.

  2. Add shiitake mushrooms and bok choy. Cook for another 5 minutes. Stir occasionally.

  3. Mix in the udon noodles gently.

  4. Enjoy.
