Stir Fry Noodles with Tofu and Broccoli
Ingredients
- 2 cups cooked udon noodles
- 1/2 tablespoon sesame oil
- 2/3 block organic extra firm tofu, pressed and crumbled
- 1 tablespoon dark soy sauce
- 2 cloves garlic, grated
- 1 cup broccoli florets, cut small and steamed until crisp-tender
Sauce
- 1 tablespoon mirin
- 1 tablespoon agave or maple syrup
- juice of half lime
- 3 to 4 teaspoons sambal
- 1 tablespoon sesame oil
- 2 tablespoons tamari
- 1/2 tablespoon dark soy sauce
- 1/4 teaspoon ginger powder
- 1/4 teaspoon garlic powder
Optional
- extra sambal to serve
Preparation
In a large pan over medium heat, add 1/2 tablespoon of the sesame oil.
Add crumbled tofu.
Cook, stirring occasionally, for 8 minutes.
Add the 1 tablespoon dark soy sauce and grated garlic, and cook for another 3 minutes, stirring often.
Add cooked noodles and sauce, and cook for another 2 minutes.
Add broccoli and cook for 1 minute.
Serve with extra sambal if you like spice.
