Refreshing Stone Fruit Salad with Basil Cashew Dressing

Ingredients

Dressing

  • 1 cup of soaked cashews
  • 3/4 cup of water
  • 1/8 cup of fresh basil
  • 1/8 cup of nutritional yeast
  • 2 tsp of apple cider vinegar
  • 1/2 tsp of salt

Salad

  • Spring mix greens
  • Black beans
  • Pickled red onions
  • Blackberries
  • Peach slices
  • Cherries
  • Green onion

Preparation

  1. Combine all ingredients for sauce into a blender and blend until creamy smooth.

  2. Plate salad on dish ware of choice and add dressing. Toss, serve, and enjoy.

  3. This dressing makes a great sandwich spread or veggie dip as well.
