Refreshing Stone Fruit Salad with Basil Cashew Dressing
Ingredients
Dressing
- 1 cup of soaked cashews
- 3/4 cup of water
- 1/8 cup of fresh basil
- 1/8 cup of nutritional yeast
- 2 tsp of apple cider vinegar
- 1/2 tsp of salt
Salad
- Spring mix greens
- Black beans
- Pickled red onions
- Blackberries
- Peach slices
- Cherries
- Green onion
Preparation
Combine all ingredients for sauce into a blender and blend until creamy smooth.
Plate salad on dish ware of choice and add dressing. Toss, serve, and enjoy.
This dressing makes a great sandwich spread or veggie dip as well.
