Sweet and Sour Sesame Cauliflower Chickpeas

Ingredients

  • around 2 cups cauliflower florets
  • 1 can chickpeas, drained and rinsed
  • 1/3 cup orange juice, freshly squeezed
  • 2 tbsp tamari
  • 2 tbsp rice vinegar
  • 1 tsp hot sauce (optional)
  • 3 tbsp water
  • 1 tbsp cornflour
  • 3 tbsp sesame seeds

Preparation

  1. Sauté the onion and garlic in either water or oil, depending on your preference, for 2-3 minutes, until softened in a non-stick frying pan

  2. Then, add the cauliflower and cook, stirring frequently, for around 5 minutes, until the florets begin to soften, and add the chickpeas, stirring to combine everything

  3. Meanwhile, prepare the sauce by stirring together the orange juice, tamari, rice vinegar, hot sauce if using, water, cornflour and sesame seeds

  4. Pour into the frying pan and cook over a medium heat for 4-5 minutes more, allowing the sauce to thicken
