Sweet and Sour Chickpeas
Ingredients
- 1 medium red onion, chopped
- 2 cloves garlic, minced
- 2 cups oyster mushrooms
- 1 can chickpeas, drained and rinsed
- 2 tbsp tamari
- 2 tbsp rice vinegar
- 1 tbsp maple syrup
- 1/4 cup water
- 1 tbsp cornstarch
Preparation
Sauté the onion and the garlic in a non-stick frying pan for a couple of minutes. When they soften, add the oyster mushrooms and continue to cook until they soften, which takes around 5 minutes.
Next, add the chickpeas, tamari, rice vinegar, maple syrup, water and cornstarch. Continue to cook, stirring frequently, for 3-4 minutes more, until the sauce thickens.
