Sweet and Sour Sesame Cauliflower Chickpeas

Ingredients

  • 1 medium red onion, chopped
  • 2 cloves garlic, minced
  • Around 2 cups cauliflower florets
  • 1 can chickpeas, drained and rinsed
  • 1/3 cup orange juice, freshly squeezed
  • 2 tbsp tamari
  • 2 tbsp rice vinegar
  • 1 tsp hot sauce (optional)
  • 3 tbsp water
  • 1 tbsp cornflour
  • 3 tbsp sesame seeds

Preparation

  1. Sauté the onion and garlic in water or oil for 2-3 minutes until softened in a non-stick frying pan.

  2. Add the cauliflower and cook, stirring frequently, for around 5 minutes until it begins to soften, then add the chickpeas and stir to combine.

  3. Meanwhile, prepare the sauce by stirring together the orange juice, tamari, rice vinegar, hot sauce if using, water, cornflour and sesame seeds.

  4. Pour the sauce into the frying pan and cook over a medium heat for 4-5 minutes more, allowing the sauce to thicken.
