Vegan Pad See Ew Stir-Fry

Ingredients

Sauce

  • 2 tbs of hoisin sauce
  • 1 tbs of sesame oil
  • 1 tbs of sweet soy sauce
  • 1 tbs of black soy sauce
  • 1-2 tbs of chili oil
  • 1 tsp of coconut aminos
  • 2 tbs of water

Stir fry

  • 1 tbs of sesame oil
  • 2 garlic cloves, minced
  • 4 cups of chopped shiitake mushrooms
  • 1 cup of fresh basil
  • 2 handfuls of greens of choice
  • 2 cups of bean sprouts
  • 1/2 of chopped peanuts
  • rice noodles

Preparation

  1. Add hoisin sauce, sesame oil, sweet soy sauce, black soy sauce, chili oil, coconut aminos and water to a mixing bowl.

  2. Mix until sauce is well combined. Set aside.

  3. In a pan over medium heat, add sesame oil and garlic. Cook for 5 minutes or until garlic is golden.

  4. Add mushrooms and cook for 10 minutes. Stir occasionally.

  5. Add greens and bean sprouts.

  6. Add sauce and mix gently. Cook 5-7 minutes.

  7. Add basil. Mix gently.

  8. Cook the noodles according to package instructions.

  9. Add noodles. Mix gently.

  10. Top it off with chopped peanuts.

  11. Enjoy
