Vegan Pad See Ew Stir-Fry
Ingredients
Sauce
- 2 tbs of hoisin sauce
- 1 tbs of sesame oil
- 1 tbs of sweet soy sauce
- 1 tbs of black soy sauce
- 1-2 tbs of chili oil ~ depending on spicy level desired
- 1 tsp of coconut aminos
- 2 tbs of water
Stir fry components
- 1 tbs of sesame oil
- 2 garlic cloves, minced
- 4 cups of chopped shiitake mushrooms
- 1 cup of fresh basil
- 2 handfuls of greens of choice
- 2 cups of bean sprouts
- 1/2 of chopped peanuts
Preparation
Add hoisin sauce, sesame oil, sweet soy sauce, black soy sauce, chili oil, coconut aminos and water to a mixing bowl.
Mix until sauce is well combined. Set aside.
In a pan over medium heat, add sesame oil and garlic. Cook for 5 minutes or until garlic is golden.
Add mushrooms and cook for 10 minutes. Stir occasionally.
Add greens and bean sprouts.
Add sauce and mix gently. Cook 5-7 minutes.
Add basil. Mix gently.
Add noodles. Mix gently.
Top it off with chopped peanuts!
