Sweet and Spicy Peanut Stir Fry
Ingredients
Spicy peanut sauce
- 1/4 cup water
- 1/3 cup unsweetened powdered peanut butter
- Juice of 2 limes
- 1 tablespoon coconut aminos or soy sauce
- 2 tablespoons maple syrup
- 3 tablespoons chili garlic sauce
- 1 tablespoon rice vinegar
Stir fry
- 1/2 red onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 red bell pepper, sliced
- 12 ounces cremini mushrooms, sliced
- 1 head broccoli, cut into florets
- 1 cup snap peas, halved
- 4 servings noodles of choice, cooked according to package and drained
- 2 tablespoons peanuts, chopped
- 1/2 cup cilantro, chopped
- lime wedges
Preparation
Add all ingredients for the sauce to a bowl and whisk to combine. Adjust lime, maple, or chili sauce to taste.
Heat a large skillet or wok over medium high heat. Add a small amount of oil or water if oil-free. Add onion, garlic, and ginger and sauté until fragrant. Add remaining veggies and sauté for 3 minutes until al dente.
Rinse cooked noodles to remove excess starch. Drain and add noodles to the skillet with veggies. Drizzle with peanut sauce. Sauté for a minute or so to heat through.
Serve hot. Garnish with peanuts and fresh cilantro.
