Vegan Tofu Chili with Vegetables

Ingredients

  • 1/4 red onion
  • 1/4 red bell pepper
  • 1/2 block of tofu (firm texture preferably)
  • Small can of kidney beans
  • Small can of corn (half used)
  • Sea salt and pepper
  • Chili (to taste)
  • Cilantro
  • Garlic
  • Cumin
  • Tomato paste
  • 1 cup of water
  • Rice
  • Chopped parsley for topping

Preparation

  1. Simmer all the ingredients except rice and parsley together.

  2. While simmering, cook rice in the microwave.

  3. Sprinkle chopped parsley on top before serving.
