Vegan Tofu Chili with Vegetables
Ingredients
- 1/4 red onion
- 1/4 red bell pepper
- 1/2 block of tofu (firm texture preferably)
- Small can of kidney beans
- Small can of corn (half used)
- Sea salt and pepper
- Chili (to taste)
- Cilantro
- Garlic
- Cumin
- Tomato paste
- 1 cup of water
- Rice
- Chopped parsley for topping
Preparation
Simmer all the ingredients except rice and parsley together.
While simmering, cook rice in the microwave.
Sprinkle chopped parsley on top before serving.
