Vegetable Makhani with Cauliflower and Spices

Ingredients

  • 1/2 head cauliflower cut in florets
  • 3 medium russet potatoes
  • 1 large sweet potato
  • 1/2 cup frozen peas
  • 2 fresh tomatoes
  • 1/2 onion chopped
  • 3 cloves garlic chopped
  • 3 inches ginger chopped
  • 2 Tbsp tomato paste
  • 1 cup coconut milk
  • 1/2 cup soaked cashews
  • 2 cups water
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 1/4 tsp coriander
  • 1/4 tsp cumin
  • 1 dash cinnamon
  • 1 pinch crushed red pepper
  • 1 pinch cayenne
  • 6 cardamoms
  • salt and black pepper to taste

Preparation

  1. Start by sautéing garlic, onion and ginger in 1 tsp olive oil until browning 3-5 mins

  2. Add potatoes and yams cut in bite size pieces and cook 5 mins

  3. Add in cauliflower and cook 5-8 mins until all veggies are getting browned and tender

  4. Add chopped tomatoes, salt and pepper lightly plus all the dry spices and cook 5 mins stirring often

  5. Add 1 cup water plus the tomato paste, coconut milk and the cashews blended with 1 cup water and bring to a boil. Stir well and let simmer 10 mins until everything is fork tender

  6. Garnish with cilantro and serve with rice!!
