Vegetable Makhani with Cauliflower and Spices
Ingredients
- 1/2 head cauliflower cut in florets
- 3 medium russet potatoes
- 1 large sweet potato
- 1/2 cup frozen peas
- 2 fresh tomatoes
- 1/2 onion chopped
- 3 cloves garlic chopped
- 3 inches ginger chopped
- 2 Tbsp tomato paste
- 1 cup coconut milk
- 1/2 cup soaked cashews
- 2 cups water
- 1 tsp turmeric
- 1 tsp garam masala
- 1/4 tsp coriander
- 1/4 tsp cumin
- 1 dash cinnamon
- 1 pinch crushed red pepper
- 1 pinch cayenne
- 6 cardamoms
- salt and black pepper to taste
Preparation
Start by sautéing garlic, onion and ginger in 1 tsp olive oil until browning 3-5 mins
Add potatoes and yams cut in bite size pieces and cook 5 mins
Add in cauliflower and cook 5-8 mins until all veggies are getting browned and tender
Add chopped tomatoes, salt and pepper lightly plus all the dry spices and cook 5 mins stirring often
Add 1 cup water plus the tomato paste, coconut milk and the cashews blended with 1 cup water and bring to a boil. Stir well and let simmer 10 mins until everything is fork tender
Garnish with cilantro and serve with rice!!
