Chickpea Cookie Dough Balls and Overnight Oats

Ingredients

  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 240ml ketchup
  • 60ml water
  • 60ml apple cider vinegar
  • 60ml brown sugar
  • 2 teaspoons paprika
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon cayenne

Preparation

  1. Combine together in a pot and heat on medium for 10-15 minutes

  2. For the cookie dough balls i combined

  3. Can chickpeas. C.a40- 60g oats. 2 tbsp peanut butter. Vanilla. Stevia. Mixed until a dough like consistency (c.a 1 minute MAX). Added chocolate chips. Formed into balls. (Note these work great to be frozen, reheated or even baked into cookies!)
