Easy and Delicious Vegan Lo Mein Noodles
Ingredients
- 250g dry ramen noodles
- 2 tbsp sesame oil
- 3 fresh onions
- 2 garlic cloves
- 2 tsp fresh ginger
- 1 chili
- 2 handful of fresh mushrooms
- 1 red pepper
- 1 yellow pepper
- 3-4 carrots
- 1 broccoli
- 1 tbsp sesame seeds
Sauce
- 1/2 cup soy sauce (mild)
- 1 tsp sugar
- 1 tbsp sesame oil
Preparation
Cook the noodles as described on the package. Dry and set aside.
Combine all the ingredients of the sauce in a jar and set aside.
Chop the vegetables in tiny slices and set aside.
Heat a wok over high heat. Add the oil, the ginger, the white part of the onions, the chili and saute for 1-2 minutes.
Add the vegetables and cook 5 minutes, then stir in the noodles and the sauce and cook for another 3-4 minutes (the vegetables should still be crunchy!).
Top with the green part of the onions and the sesame seeds.
