Easy Vegan Beany Pasta with Hidden Veggies
Ingredients
- 3 peppers, chopped
- 1 red onion, chopped
- 3 garlic cloves, chopped
- 1 tsp chilli powder
- 1 tsp smoked paprika
- 1 tsp mixed herbs
- 1 tin chopped tomatoes or plum tomatoes
- 1 tin kidney beans, drained and rinsed
- 1 tin beans in a chilli sauce (I used Tesco’s taco beans)
- A good splash of plant milk
- Pasta/spaghetti
Preparation
Add the pepper and onion to a pan and fry for five minutes.
In a separate pan, cook the pasta.
Add the garlic, spices and herbs to the pan and cook for a minute.
To a processor/blender, add the chopped tomatoes and fried vegetables. Blend until mostly smooth.
Pour the contents of the blender back into the pan. Add a good splash of plant milk to the blender, swill around the edges and pour into the pan. Add the beans to the pan and mix in. Leave to simmer for a few minutes.
Once the pasta is cooked, drain and then top back into the pan. Pour the sauce on top and mix in.
