Easy Vegan Beany Pasta with Hidden Veggies

Ingredients

  • 3 peppers, chopped
  • 1 red onion, chopped
  • 3 garlic cloves, chopped
  • 1 tsp chilli powder
  • 1 tsp smoked paprika
  • 1 tsp mixed herbs
  • 1 tin chopped tomatoes or plum tomatoes
  • 1 tin kidney beans, drained and rinsed
  • 1 tin beans in a chilli sauce (I used Tesco’s taco beans)
  • A good splash of plant milk
  • Pasta/spaghetti

Preparation

  1. Add the pepper and onion to a pan and fry for five minutes.

  2. In a separate pan, cook the pasta.

  3. Add the garlic, spices and herbs to the pan and cook for a minute.

  4. To a processor/blender, add the chopped tomatoes and fried vegetables. Blend until mostly smooth.

  5. Pour the contents of the blender back into the pan. Add a good splash of plant milk to the blender, swill around the edges and pour into the pan. Add the beans to the pan and mix in. Leave to simmer for a few minutes.

  6. Once the pasta is cooked, drain and then top back into the pan. Pour the sauce on top and mix in.
