Fresh Garden Veggie Pizza

Ingredients

Crust

  • 450g 00 flour
  • 1 tsp sugar
  • 7g instant dry yeast
  • 2 tsp salt
  • 1 1/2 cup water at 110F
  • 2 tbsp olive oil

Toppings

  • Swiss chard, chopped
  • basil, fresh
  • mint, fresh
  • fresh peas, lightly steamed
  • radish, sliced
  • avocado, sliced
  • balsamic vinegar
  • avocado oil
  • salt and pepper

Preparation

  1. Combine dry ingredients in a stand mixer.

  2. Add water and oil and mix until a dough ball forms.

  3. Knead dough until smooth, adding flour as needed one tablespoon at a time.

  4. Place dough in a large, greased bowl, cover with plastic wrap, and allow to rise in a warm area for roughly an hour.

  5. Once dough has doubled in size, divide into 2 equal pieces and cover with a kitchen towel until ready to roll out and add toppings.

  6. Brush crust with olive oil and cook on a pizza stone in a piping hot oven until golden, about 12 minutes.

  7. Remove dough from oven and allow to cool slightly.

  8. Optional: brush outer crust with additional olive oil and dip in poppy seeds.

  9. Toss Swiss chard, basil, mint, and peas with balsamic vinegar, avocado oil, salt, and pepper.

  10. Add the mixture to the pizza.

  11. Top with sliced radish and avocado.

  12. Season with additional salt and pepper.
