Homemade Vegan Stir Fried Sticky Rice

Ingredients

  • 1 lb glutinous rice
  • 10-12 dried shiitake mushrooms
  • 1 Tbsp oil
  • 1/2 cup carrots
  • 1/2 cup long beans
  • 1 Tbsp shallots
  • 1 tsp garlic
  • 1/4 Tbsp salt
  • 2 Tbsp Artificial chicken powder
  • 2 cups water
  • 1 Tbsp chives (optional)
  • 1 Tbsp Vegetarian Stir Fry sauce
  • 1 Tbsp Dark Soy sauce

Marinade

  • 2 tsp sugar
  • 1 tsp salt
  • 1 Tbsp shaoxing wine
  • 1 Tbsp sesame oil

Preparation

  1. Rinse and soak 1 lb glutinous rice in water for 5 hours and drain.

  2. Soak 10-12 dried shiitake mushrooms in water for 2 hours.

  3. Squeeze water out from mushrooms and add marinade. Set aside for at least 1 hour.

  4. Chop mushrooms into small dice.

  5. Add oil to pan on medium heat.

  6. Add mushrooms and stir-fry for two minutes.

  7. Add carrots and long beans and stir for about 3 minutes.

  8. Add shallots and garlic and stir for another 3 minutes.

  9. Add salt and mix well.

  10. Mix veggie broth powder with 2 cups water and add into rice mixture, 1/4 cup at a time, stirring in between for about 20 minutes.

  11. Add chives if desired or use scallions if not allergic.

  12. Add vegetarian stir fry sauce and dark soy sauce. Mix well.

  13. Taste to ensure rice is cooked. Optionally top with JUST Egg shreds for added texture.
