Kale Salad with Creamy Vegan Tahini Dressing

Ingredients

  • 4 cups kale
  • 1 cup sweet potato (roasted)
  • 1/2 cup cooked quinoa
  • 1/4 cup radishes (thinly sliced)
  • 1/4 cup red cabbage (shredded)
  • 1/2 cup avocado (diced)

Tahini dressing

  • 1/4 cup tahini
  • 2 tablespoon dijon mustard
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon apple cider vinegar
  • 3 tablespoon cool water
  • 1 teaspoon agave nectar

Preparation

  1. Roast the sweet potato until tender and allow to cool

  2. Cook the quinoa according to package instructions and let it cool

  3. Prepare the tahini dressing by whisking all dressing ingredients together until smooth

  4. Thinly slice the radishes and shred the red cabbage

  5. Dice the avocado and set aside

  6. Massage the kale with a little oil or lemon juice to soften it

  7. Assemble all salad ingredients in a large bowl and toss with the tahini dressing
