Preparation
Refresh the radicchio in icy water to crisp it up.

Slice the murcott mandarins.
Arrange the radicchio as a base and layer with sliced mandarins, fresh mint, marinated tofu, steamed edamame, and chopped pistachios.
Drizzle with the tofu marinade and honey for the dressing.
