Mild Spiced Apple Ginger Dal Bowl
Ingredients
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 1/2 inch piece fresh ginger, grated
- 1 teaspoon cinnamon
- 1 teaspoon ground cumin
- 1 teaspoon turmeric
- 1 1/2 cups dried red lentils
- 1 can lite coconut milk
- 2 cups water
- 2 apples cored and cut into cubes
Preparation
Add the onion and garlic to a medium saucepan and saute with 1-2 Tablespoons of water. When onion and garlic are translucent, add salt, ginger, cinnamon, cumin and turmeric and stir to coat the onion and garlic.
Rinse red lentils well. Add to the saucepan along with the coconut milk and water. Bring to a boil and then reduce to low heat. Simmer on low for 15 minutes.
Chop apples while lentils simmer. After 15 minutes, add the apples, cover, and cook for an additional 5 minutes.
Serve over rice with cilantro and lime wedges. Optionally, add sliced jalapeño for heat if desired.
