Mushroom and Quinoa Burgers

Ingredients

  • 1 onion
  • 5 cloves garlic
  • 500g mushrooms
  • 3 tbsp dark miso
  • 1 tbsp fresh rosemary, chopped
  • 3 tbsp tomato paste
  • 3 tbsp soy sauce
  • 700g cooked quinoa
  • 400g vital wheat gluten

Preparation

  1. In a food processor chop the onion, garlic and mushrooms up finely

  2. Transfer to a large bowl and add in the miso, soy sauce, tomato paste and herbs and mix well

  3. Add the cooked quinoa and mix again until well combined

  4. Finally add the wheat gluten and knead with your hands until the mixture comes together

  5. To make the burgers either shape with your hands or press into the bottom of a round cookie cutter

  6. Place on lined baking sheets and bake at 180C for 40 mins. Enjoy in a bun with your favourite trimmings
