Sweet Chilli Tofu and Chickpea Salad Jars
Ingredients
- 1 small iceberg lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 cup cooked or canned chickpeas
- 1 pack SOYCO Sweet Chilli Marinated Tofu
Dressing
- 1/2 cup hummus
- 2 tbsp lemon juice
- 2 tsps Dijon mustard
- 1/2 tsp garlic powder
- 1-2 tbsp water (to thin, if needed)
- Salt and pepper to taste
Preparation
In each jar or container, add half of the hummus, lemon juice, Dijon mustard, garlic powder, and a splash of water if needed, then stir well to combine and season with salt and pepper to taste.
Add the salad ingredients into the jar or container.
Secure the lids and store in the fridge for up to 3 days.
When ready to eat, shake the jar or pour into a bowl and toss everything together to coat with the dressing.
