The Best Vegan Carbonara

Ingredients

  • 1 portion spaghetti
  • 1/4 onion
  • 1/2 clove garlic
  • 70g smoked tofu
  • 20g raw cashews
  • 1/4 cup water
  • 1/4 cup nutritional yeast
  • just under 1 tablespoon lemon juice
  • 1 teaspoon tahini
  • almond milk
  • turmeric
  • black salt
  • salt
  • pepper
  • additional smoked tofu
  • vegan bacon
  • sweetcorn
  • parsley

Preparation

  1. Serves 1, but can be easily doubled or tripled.

  2. Cook spaghetti until soft.

  3. Sauté onion and garlic until soft.

  4. Boil raw cashews for 10 minutes.

  5. Blend smoked tofu, boiled cashews, water, nutritional yeast, lemon juice, tahini, almond milk, turmeric, black salt, salt, and pepper in a food processor, adding almond milk until desired thickness and adjusting seasonings to taste.

  6. Sauté additional smoked tofu until crumbled and scrambled.

  7. Prepare vegan bacon, sweetcorn, and parsley as desired.
