Vegan Apple Ginger Lentil Dal
Ingredients
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 1/2 inch piece fresh ginger, grated
- 1 teaspoon cinnamon
- 1 teaspoon ground cumin
- 1 teaspoon turmeric
- 1 1/2 cups dried red lentils
- 1 can lite coconut milk
- 2 cups water
- 2 apples cored and cut into cubes
- Optional: 1 sliced jalapeño
- Rice for serving
- Fresh cilantro
- Lime wedges
Preparation
Add the onion and garlic to a medium saucepan and saute with 1-2 tablespoons of water until translucent.
Add salt, ginger, cinnamon, cumin, and turmeric, then stir to coat the onion and garlic.
Rinse red lentils well.
Add the rinsed lentils to the saucepan along with the coconut milk and water.
Bring to a boil, then reduce heat to low and simmer for 15 minutes.
Chop apples while lentils simmer.
After 15 minutes, add the chopped apples, cover, and cook for another 5 minutes.
Serve over rice with cilantro and lime wedges.
Add a sliced jalapeño if you prefer more heat.
