Hearty Turmeric Lentil Soup
Ingredients
- 1-2 tbsp coconut oil
- 1 onion, chopped
- 2 carrots, chopped
- 1 tbsp turmeric
- 3 garlic cloves, minced
- 2 tbsp fresh ginger
- 1 small can/jar of tomatoes
- 1 can full fat coconut milk
- 5 cups vegetable stock
- 1.5 cups rinsed, dried red lentils
- 1 small head cauliflower, chopped
- 1 medium sweet potato, chopped
- 1 lemon, juiced
- Fresh cilantro
- Salt & pepper
Preparation
Sauté onion and carrot in coconut oil for a few minutes. Add in turmeric, garlic and fresh ginger. Sauté a couple more minutes.
Add canned tomatoes, coconut milk and veg stock and bring to a light boil. Then add lentils, cauliflower and sweet potato and simmer until everything is tender.
Add lemon juice, chopped fresh cilantro and season with salt and pepper.
