Vegan Burger Bowl with Mushroom Walnut Patties
Ingredients
- 2 cups cooked brown rice
- 1 big handful of walnuts
- 2 garlic cloves
- 1 onion
- 500 grams mushrooms
- Fresh oregano to taste
- Fresh thyme to taste
- 2 tsp garlic powder
- 2 tsp onion powder
- Salt and pepper to taste
- 2 tbsp soy sauce
- 1 tbsp maple syrup
- Fresh parsley
- 3 tbsp arrowroot powder
- 1/2 tsp liquid smoke (optional)
- 3 tbsp tapenade
Preparation
Preheat oven to 200 degrees Celsius.
In a pan, fry the onion until translucent.
Add the garlic cloves and fry for another 2 minutes.
Add the chopped mushrooms, thyme, oregano, onion powder, and garlic powder, and cook until done (about 5-10 minutes).
Transfer the mixture to a food processor.
Add the walnuts, brown rice, soy sauce, maple syrup, tapenade, parsley, salt, and pepper, and pulse until well combined.
Form the mixture into patties and bake in the oven for 30-40 minutes, turning halfway through. The outsides should be crispy.
Serving suggestions
Serve with curry, chickpeas, spinach, spring onions, and avocado.
