Vegan Creamy Baked Potato Dish

Ingredients

  • 1 diced onion
  • 2 cloves minced garlic
  • 1 can coconut cream
  • 2 heaped tablespoons nutritional yeast
  • salt
  • a dash of chilli powder
  • 1 tablespoon smoked paprika
  • thinly sliced white potato
  • thinly sliced sweet potato
  • chopped chives for garnish

Preparation

  1. Sauté 1 diced onion and 2 cloves of minced garlic until translucent in color

  2. Add 1 can coconut cream, 2 heaped tablespoons nutritional yeast, salt, a dash of chilli powder, and 1 tablespoon smoked paprika; stir until slightly thickened

  3. In a baking tray, layer thinly sliced white potato and sweet potato, covering each layer with some of the cream mixture

  4. Bake covered in foil for approximately 30 minutes at 150 degrees fan forced oven

  5. Once the potato is cooked, remove the foil and cook for another 15 minutes until the top is crispy

  6. Add some chopped chives for garnish and enjoy
