Sun-dried Tomato Pesto Pasta

Ingredients

  • 1/2 jar, 12-14 sun dried tomatoes (in oil)
  • 50g pine nuts (or other nuts like walnuts or cashews)
  • 2 tbsp. nutritional yeast
  • 1 clove of garlic
  • 1 tsp. dried oregano

Optional

  • salt
  • olive oil or water

Preparation

  1. Add the sun dried tomatoes with a bit of oil (about 50ml) from the jar to a food processor along with the pine nuts, garlic, oregano and the nutritional yeast.

  2. Blend everything until the mixture is smooth.

  3. Add a bit more oil or water to make the consistency even smoother.

  4. Cook pasta according to package instructions.

  5. Toss the cooked pasta with the pesto mixture.

  6. Serve immediately.
