Sun-dried Tomato Pesto Pasta
Ingredients
- 1/2 jar, 12-14 sun dried tomatoes (in oil)
- 50g pine nuts (or other nuts like walnuts or cashews)
- 2 tbsp. nutritional yeast
- 1 clove of garlic
- 1 tsp. dried oregano
Optional
- salt
- olive oil or water
Preparation
Add the sun dried tomatoes with a bit of oil (about 50ml) from the jar to a food processor along with the pine nuts, garlic, oregano and the nutritional yeast.
Blend everything until the mixture is smooth.
Add a bit more oil or water to make the consistency even smoother.
Cook pasta according to package instructions.
Toss the cooked pasta with the pesto mixture.
Serve immediately.
