Vegan Stacked Sandwich with Apricot Sauce

Ingredients

  • 4 slices sourdough bread (rectangular)
  • 1 block tofu, sliced thin
  • 1 package vegan ham deli slices
  • Field greens (such as arugula)
  • Vegan cheese slices
  • Pineapple slices (cored)
  • Tomato slices

Apricot sweet and sour sauce

  • 1/2 cup oil
  • 1/2 cup lemon juice
  • 1 1/2 cups apricot jam
  • 1 cup ketchup
  • 3-4 tablespoons brown sugar
  • 4-6 tablespoons grated onions
  • 1 teaspoon salt

Preparation

  1. Prepare the apricot sweet and sour sauce by whisking all sauce ingredients together until blended.

  2. Grill the sourdough bread and pineapple slices.

  3. Pan fry the tofu slices and brush both sides with the apricot sauce.

  4. Layer each piece of toast with field greens, tofu slices, vegan ham, vegan cheese, grilled pineapple, tomato slices, and field greens again.

  5. Repeat the layering process with the second piece of toast to make another sandwich.

  6. Cut both sandwiches in half and stack them on top of each other.

Tips

  1. Use a mandolin to slice tofu, vegetables, and pineapple for even layers.

  2. If the sandwich does not stack well, secure it with a barbecue skewer.
