Warming Leek and Potato Soup
Ingredients
- 1 large potato
- 3 leeks
- 1 white onion
- 2 cloves garlic
- 1 tsp nutmeg
- 1 litre veg stock
- Olive oil, salt and pepper
Preparation
Finely slice the onion, leek and garlic.
Peel and chop the potato into small chunks.
Heat a pan, add oil and fry the onions and leeks until starting to colour (about 5-7 minutes).
Add in the garlic and fry for another 2-3 minutes.
Throw in the potatoes, stir everything together and then pour in the stock.
Bring to a boil, then reduce and simmer until potatoes are soft.
Blitz the whole thing until nice and creamy and serve.
