Warming Leek and Potato Soup

Ingredients

  • 1 large potato
  • 3 leeks
  • 1 white onion
  • 2 cloves garlic
  • 1 tsp nutmeg
  • 1 litre veg stock
  • Olive oil, salt and pepper

Preparation

  1. Finely slice the onion, leek and garlic.

  2. Peel and chop the potato into small chunks.

  3. Heat a pan, add oil and fry the onions and leeks until starting to colour (about 5-7 minutes).

  4. Add in the garlic and fry for another 2-3 minutes.

  5. Throw in the potatoes, stir everything together and then pour in the stock.

  6. Bring to a boil, then reduce and simmer until potatoes are soft.

  7. Blitz the whole thing until nice and creamy and serve.
