Baked Buffalo Cauliflower Bites
Ingredients
- 1/2 head cauliflower cut into 1 1/2 in florets
- 1 cup flour
- 1/2 tsp salt
- 1/4 tsp pepper
- 3/4 coconut milk
- 2 tsp apple cider vinegar
- 2 tbsp vegan hot sauce
- 1 1/2 cups Panko bread crumbs
- 1 tsp paprika
- 1/2 tsp garlic powder
Buffalo sauce
- 1/2 cup hot sauce
- 2 tbsp coconut oil
- 1 tbsp organic sugar (I used coconut)
- 2 tsp apple cider vinegar
Preparation
Cook cauliflower in boiling water on stovetop for 4-5 minutes until fork tender but not mushy. Drain, rinse with cold water until cool, dry, and set aside.
Set up three bowls for breading: one with flour, salt, and pepper; second with coconut milk, apple cider vinegar, and hot sauce evenly combined; third with Panko bread crumbs, paprika, and garlic. Line a large baking sheet with parchment paper misted with oil.
Take one cauliflower piece, toss it into the flour bowl shaking off excess, dip into the milk mixture covering all areas, then coat in the Panko mixture ensuring complete coverage, and place on the baking sheet. Repeat with all cauliflower pieces until coated.
Bake at 400°F for 20 minutes, flipping halfway through.
While the cauliflower is baking, prepare the buffalo sauce by whisking all sauce ingredients together over low heat on the stovetop until the coconut oil is melted and the sauce is warm.
Pour the sauce into a medium bowl and gently mix the baked cauliflower bites in the sauce until evenly coated. Enjoy!
